Of the 2000 species of pepper plants resulting from the Piper kind, long pepper is one of most original!
This pepper has a hot and prickly savour, with vanilla and sweetened notes, less prickly than round pepper. It can be used crushed or out of infusion, and is ideal with desserts with the chocolate, in cake or fruit salads, with caramel.
History: it is one of first spices to have reached the Occident, and it is of its name Sanskrit pippali that name comes from pepper. Long pepper was sold 4 times more expensive than round pepper in ancient Rome.
