The pepper of Voatsiperifery is a wild pepper collected with the hand in the wet tropical forest belts of Madagascar. Rare and ignored spice, even in Madagascar, it releases an odor timbered with the earthy notes, but also of fruits, citrus fruits, flowers… It have also a freshness and prickly incisive, tough but absolutely not violate. Often confused with the cubèbe because of its small tail, it is characterized some by smaller bays and a twisted tail.
It joins well the meats the such pig and the lamb, the coconut milk but also the fruits and even the chocolate… Attention however with the cooking which it abrupt and makes it bitter…

Culture: This pepper plant leads to the wild state, and its gathering is difficult because this liana goes up on the trees up to 20 meters in height! And it bears fruit only on the young growths, therefore all in top… This gathering on feet savage explains why one finds in spice of bays at various stage of maturity of green bays (black after dryings) and of red bays.
